In our house, I make sure to serve vegetables at dinner every night. I try and switch it up a bit so we don’t get too bored.
We refer to my older daughter as our “vegetable girl”. It started when she could first eat solid foods. I know most moms when starting their babies out with solid foods, ease into it with the “orange” variety – carrots, sweet potatoes, or even squash. Not me! I went straight for the greens! It was probably string beans I would imagine. I know some would call this cruel, but I guess it seemed to work!
At one point her favorite snack was baby carrots. We couldnt keep up with the demand! At times we literally had to cut her off. Nowadays, she still goes for the veggies fiirst. When she turned 7 back in September, I asked what she wanted me to make for her b’day dinner and she said – “my favorites – zucchini, eggplant and asparagus”. I know, weird, right?!?
My little one on the other hand is completely opposite. She’s like an inspector – dissecting her meal to make sure she eliminates anything that is green.
The other night I decided to make kale. Kale is a leafy green vegetable that you can buy in bunches or pre cut in bags. This time I bought the pre cut kind. All I did was wash it with cold water, pat it dry, place it on a baking sheet drizzled with some extra virgin olive oil (drizzled, not drowned), salt and pepper. I put it in a preheated oven at 275 degrees and let it cook for 20 minutes or so. The leaves start to get nice and crispy!
Can I tell you, BOTH of my girls WENT TO TOWN on these greens! Yes – even the inspector general!
So, my advice to you – get yourself a bag of kale! Your kids will be happy which really means, YOU’LL be happy!!

I’ve never tried making kale that way! I usually cook it on the stovetop, stir it into soup, or use it as part of pasta. I do like Kale a lot. I’m going to have to try baking it!

Let me tell you about the kale. Were your ears ringing last night. My roomie and I were singing your praises. First, I took the bag out and we thought just making half the bag would be enough for the both of us. WRONG. It shrunk like crazy. I followed your recipe and it came out great. It barely made it to the plate because we both tried it and started snacking on it. lol

So glad you liked it! Yeah, I guess I fort to mention the shrinkage. 🙂 I’ve been making it once a week now and can I tell you – last week it was AMAZING! It was the perfect crispiness – my girls and I were fighting for it! Yesterday the hubbs went food shopping and my older daughter requested he buy FOUR bags of kale! he came home with TWO. 🙂
