We just LOVE roasted asparagus in my home. Roasting almost any vegetable makes it taste great.
This one is also super easy and can be used for a regular weekday meal or for the upcoming big turkey day!
I have to say, I’m not normally a price watcher but I can’t seem to bring myself to buy asparagus when it’s over $2.99 a pound. It’s just a weird thing I have so when it’s $2.99 and under I scoop it up.
OK, let’s start. As with any vegetable, rinse it off in cold water. The ends of the asparagus of tough and fibrous so we want to get rid of that part, but how do you know how far to go?
Take one and hold it towards the end and bend it Where it break is where you should cut. In this case it broke a bit too high so I just went down a bit lower.
Line it up with the rest of the bundle and cut. (my daughter helping me out!)
If you want the asparagus to be crispy, cook it on a metal sheet pan. Line them up in a single row, drizzle with about 2 to 3 tablespoons of extra virgin olive oil, sprinkle with kosher salt and put in the oven at 350 degrees Depending on the thickness of the asparagus, start checking around 20 minutes in.
I let mine go a bit longer because I really like ti crispy – especially the ends. YUM!
You can squeeze some lemon over it for a burst of freshness or even sprinkle with grated Parmesan cheese. I like it straight up.
So easy, right?!?
I have to warn you. If you’ve never eaten asparagus before, you may be surprised when you go to the bathroom. For some reason it makes your pee stink! But don’t let that stop you from eating it. It’s too good!
