Here’s another easy one for you!
I’m always looking for new potato recipes. I just love potatoes!!
When i was a kid my mom would make us these fancy mashed potatoes that she called potato puffs. I love them and started making them for the girls and they’re a hit with them as well.
First you want to start with half of a sweet or yellow onion diced.
Saute in 2 tablespoons of butter on medium heat until they get to be a caramel color like this…
While the onions are cooking we want to start cooking the potatoes. For the 4 of us I used 3 regular Idaho/baking potatoes. Honestly I don’t really even know what they’re exactly called – the regular ones!
Peel the skins off, cut lengthwise in half, then in half again then in smaller chunks – about 1 inch in size
Put all the potatoes in a pot with cold water and some kosher salt. Put the lid on – the water will eventually come to a boil. Start testing for doneness in about 20 minutes. If you stick a knife or fork in the potato it should come out easily.
Drain the potatoes and put them back in the pot. Start mashing them up with a potato masher or fork.
By this time the onions should be done so add them to the potatoes. I then added 6 to 8 tablespoons of half and half but you can use skim milk or any other kind of milk.
Beat one large egg and mix into the potatoes with some salt and pepper to taste.
It should look like mashed potatoes!
Get a muffin pan and some cupcake liners – I had these cute fall designed ones.
Scoop the potato mixture into each cup. I was able to get almost 11 out of it.
Sprinkle the top of each puff with paprika and bake in the oven at 350 degrees for about 15 to 20 minutes or so.
The tops will get a bit crispy.
You’re done! These are great as party food because they’re easy to pick up and they’re already portioned out.
If you’re making it for your family and don’t want to get all fancy, just put the entire mixture into one baking pan, cook as mentioned above and serve family style. Dig in!

Hey Stace, you bring me back to my childhood w/this recipe. But instead of individualizing, mom coated a baking vessel (corningware in our day). She would butter the baking vessel and then coat w/bread crumbs. The potato mixture would puff up around the corningware like a souffle! Delish and u got the crunchiness thing going on.
She would use the left over mashed potatoes, but fresh would b equally delish. Enjoy!
