Soft flour tortillas don’t only need to be used for tacos. – which personally I don’t even like! I much prefer the messy crunchy corn shells with my tacos!
But I do use tortillas in other ways. Here for example I’m making a breakfast roll-up. It was inspired by a breakfast I had 2 summers ago when I was with my family in Wildwood, NJ. We ate at a place called Samuel’s Pancake House. No…I did not get the pancakes!
Start with a medium sized soft flour tortilla (approx 10 inches in diameter). I use the Mission Foods brand.
Before you start cooking there are a few things you can prep – shred up some cheese – I use sharp Cheddar, and slice up some avocado. If you need help, I did a previous post on how to cut an avocado.
Cook 2 strips of bacon to whatever doneness you like. For me, I don’t like crispy bacon. You can substitute turkey bacon or not use bacon at all. Up to you!
Start cooking your eggs. I made 2 scrambled eggs by melting a little butter in a pan, beating 2 eggs in a bowl, pouring it in the pan and then mixing it around until it was cooked through.
Once the eggs are cooked put them in the middle of the tortilla and sprinkle with a LITTLE salt. Remember you will get some salt from the bacon so you don’t need a lot.
Next sprinkle on your cheese. The heat from the eggs will start to melt the cheese.
Add your 2 slices of bacon…
and lastly your slices of avocado.
Start with one end and start rolling it up!
Slice it in half so you can see all the goodness. This can definitely be shared. I was starving and ate the whole thing by myself but I was really full afterwards.
I like to dip each bite in salsa. Use any amount of heat you like. If it was just for me I’d have Medium but everyone else in my family likes Mild.
