Tonight is the last night of Chanukah. During Chanukah many people eat potato latkes. For those of you that don’t know what a latke is, just think of “pancake”.
Normally I LOVE potatoes – in every shape and form. Except that is, potato latkes – especially the homemade kind. This is one of the VERY FEW times I actually prefer a box mix. Sounds gross, I know, but I don’t know what it is.
Instead what I like to make are zucchini pancakes – and yes, HOMEMADE!!
I got the recipe from The Barefoot Contessa – Ina Garten. Yum! These are so good you have to try it!!
You start out with 2 medium size zucchini, cut off the ends and then grate them.
Next you need a couple of tablespoons of red onion – either grated or finely chopped.
Mix in some eggs, flour, baking powder, salt and pepper, The batter may seem runny – this is ok. If it’s too runny then just add in a little more flour.
Fry them up in some canola or vegetable oil and you’re done!
Mmmmm – wish I had some now!! So good!
