This past weekend, I woke up in the mood to cook breakfast. This rarely happens! If I’m not going out to brunch, it’s usually a bowl of cereal for the family. I cook dinner. That”s enough, right?!?
I looked through the fridge and saw we had zucchini so I decided to make a zucchini fritata. It was so easy and delicious! My girls even ate it so it is definitely kid friendly.
I started by sauteing half a diced onion in some butter and olive oil. Once it got translucent, I added a diced Roma tomato and 2 zucchini that I had cut into thin slices. I added salt and pepper and let it cook down a bit. In a bowl, I mixed together 5 eggs with some grated Parmesan cheese.
Once the eggs were set for a minute or so, I sprinkled more Parmesan cheese on op with some chopped fresh Italian parsley. I then put the whole pan into a 350 degree oven for about 10 minutes.
My older daughter had 3 pieces! I paired it with Mandarin oranges and we all loved it!

Zucchini Fritata
1 Tablespoon butter
1 Tablespoon Olive Oil
2 medium zucchini cut into thin slices
1/2 diced onion
1 diced Roma tomato
5 beaten eggs
at least 1/4 cup grated Parmesan cheese
Chopped Italian Parsley (fresh, not dried)
Salt & Pepper to taste
- Melt the buster and olive oil in an oven safe pan
- Saute onions until translucent
- Add sliced zucchini to the pan and cook for a few minutes
- Add the diced Roma tomatoes to the pan and cook for a few minutes
- Add salt and pepper to taste
- Once the vegetables have cooked down a bit, add the beaten eggs with about 1/2 of the Parmesan cheese
- Cook for a minute until edges start to set
- Sprinkle more cheese on top along with chopped fresh parsley
- Place in 350 degree oven for ten minutes or until top looks like it is starting to brown
- Take it out of the oven, slice it up and eat!
Notes:
- Do NOT put a pan in the oven with a plastic handle. Make sure the pan is OVEN SAFE
- When you are cooking the vegetables and if the pan seems to get dry, add in a bit more olive oil
- Use as much salt and pepper to your particular taste.

Sounds good! Like you I rarely cook breakfast but when I do it’s classics like pancakes, French toast or scrambled eggs and (turkey) bacon. Your frittata sounds like a great alternative though!
