I love when I can come up with quick and easy things to cook that not only I like but my family likes as well.
The other day I was out getting supplies for my art class and I knew I had to pick up my girls from school soon. I only had a few minutes to come home and eat something and I was starving!
I decided to make bean and cheese quesadillas.
How simple is this – 3 ingredients!!
Flour tortillas, shredded Monterrey Jack or Sharp Cheddar Cheese and refried beans. I use the vegetarian kind.
I used the smaller sized tortilla since it was lunch. When I make beef quesadillas for dinner I use the larger ones.
Start getting a pan or griddle hot with a little bit of oil. I used Canola.
Spread the refried beans on one tortilla.
Pile on the shredded cheese. You can buy it shredded or buy a block of cheese and shred it yourself. It only takes seconds.
Looks like a pizza, right?
Put the other tortilla on top and place it in the pan.
As it heats up, the cheese will melt and the tortilla will get crispy. Time to flip it over. Only needs a minute or 2 and you’re done.
Place it on a cutting board and cut it into quarters.
I like to eat mine with salsa spread on top. UH! It’s so good and addicting! I love how oozy the cheese gets, the creaminess of the beans, the crunch of the tortilla and the cooling effect of the salsa.
When my girls came home I made them one and they loved it. This would be great if you’re having friends over as well.
Quick, easy, inexpensive and delicious. Need I say more??
