Many moons ago my friends and I took a trip to Spain. We had so much fun exploring Madrid and Barcelona!
Back then I was a much less adventurous eater than I am now. I can still be picky but I definitely get excited about food. One night for dinner we went to a restaurant for paella. My friends were so excited! I on the other hand felt unenthused. I don’t eat fish! There was no way I was going to eat paella – even the rice would taste fishy!
When we sat down though, our waiter brought us this delicious garlicky tomato toast. I was so excited! I could just eat a basket of this crunchy toast and be happy while they’re devouring their fishy paella.
I don’t know what made me think of it today but since I did, I decided to make some. I’m so glad I did – it was really good!
I started by slicing up a baguette
and drizzling some olive oil over the top.
I put it in the oven at 350 degrees for about 10 minutes until it got golden brown and crunchy. You can also grill the bread if you have one available to you.
While it’s still hot, grab yourself a peeled garlic clove and a cut tomato – the meatier the better.
First rub the garlic over each piece. As you rub, the piece of garlic gets smaller and smaller. Then you rub the cut side of the tomato over each slice, then sprinkle with some kosher salt.
It’s crazy how something so simple can be so good! You get the taste of garlic and tomatoes without having big chunks falling off.

I’ve gotten over my dislike of paella and even made it a few times – HOWEVER I only use chicken, sausage and vegetables. No fish! 🙂
