Easy Recipe: Gloria’s Garlicky String Beans

This really shouldn’t even be called a recipe because it’s that easy!

One day years ago, my mother-in-law GLORIA was visiting and wanted to help with dinner.  I gave her the string beans without knowing what she’d do with them.  Which by the way, do you call them string beans or green beans?  They’ve always been string beans in our home.  Just curious.  So she made these simple garlicky string beans that I still always make and my girls love.  I love to share simple recipes that kids will actually eat!

Start off by getting a pot of water boiling  While you’re waiting for the water to come to a boil, start getting the string beans ready. Rinse off under cold water to clean them.

Line them up and cut off the ends.

When the water comes to a boil, put in a big pinch of kosher salt.  This will flavor the string beans as it cooks.  Put the string beans in the water and let cook.

Next chop up some garlic – about 1 to 2 cloves depending on how many string beans you’re cooking and how garlicky you like it.  Chop it as finely as you can because it’s not going to cook.

Put the chopped garlic and some olive oil in the bowl that you’ll be serving from.

Cook the string beans as long as you like depending on how soft you like them.  My girls like them very soft so I cook them for about 10 to 15 minutes or so.  Once they’re done, drain and place them in the same bowl as the garlic and olive oil.   Mix it around so the string beans are all covered.  The heat from the string beans will warm up the oil and mellow the garlic a bit.  Taste for seasoning and add salt if necessary.

The day I made them I paired it with these stuffed chicken breasta.

If you’re trying to make a holiday dinner easier then definitely make these!  Great for regular dinner as well.

Enjoy!
