Earlier this week I had one of those nights where I needed something really quick and easy to make for dinner. I just didn’t have the hours (or the desire) to dedicate to being in the kitchen. When I was over on the Simple As That blog, I spotted a recipe for Taco Soup. I love soup and the girls love tacos so it seemed like a perfect solution.
My one mistake was that I announced what I was going to make “What?!? Eeeewww – who wants taco soup?!? We never had that before!” I ignored it but put some of the meat off to the side to make actual tacos just in case there really was an issue which I was pretty confident that there wouldn’t be.
I made the soup, tacos, a salad and heated up some corn that I had leftover from making the soup. All was a success! They even went back for a second round of soup! Inside I was thinking “told ya so!”

The recipe calls for a can of corn – I used a bag of frozen corn. I put about half in the soup and the rest I heated up as a side dish.
It also called for a can of diced tomatoes. I always have cans of whole tomatoes on hand so I just used that instead and whizzed it up in the food processor for a few seconds. I know my girls don’t like chunks of tomatoes so I made it smooth.
I think what drew me to the recipe was the Fritos! Can you remember the last time you had those crunchy corn pieces of goodness? Well let me tell you, it’s as good as you remember! The other extra toppings I added were avocado and shredded cheddar cheese.
The soup was really good. It reminded me of a thinner version of chilli, which reminds me – I used red kidney beans and not black beans.
I was even psyched for the leftovers! My younger daughter and I each had it the next day for lunch – she was at school, and I was in front of my computer with my big green mug.
