Earlier this week I was making a special salad for my mom’s birthday lunch. One of the ingredients was pine nuts. Oh how I LOVE pine nuts! Whenever I have pine nuts on hand, I love to bake Giada De Laurentis’ Pine Nut Cookies. They are so easy to make and so delicious to eat! You can find the specifics on the Food Network Website for making the dough.
I made the dough the night before I baked them but the dough really just needs to be refrigerated 2 hours before baking. Once you mix all of the ingredients together, you form it into a log shape, wrap with plastic wrap or wax paper and then refrigerate. Basically you are making a slice and bake dough. One thing that makes these cookies unique is that they have fennel seeds in the dough. It’s a great flavor combination with the pine nuts.
Slice the dough into about 1/4 inch slices. No rulers necessary – just wing it! Top each slice with pine nuts. I like a lot on my cookies!! Bake for about 15 minutes at 350 degrees until the edges start to brown.
These are one of my favorite cookies! Problem is I can’t stop eating them!! I think these would be a great food gift during the holidays.
